Makhana is the popped seed of the water lily, grown in Bihar’s ponds. It is light and mild, and unlike most puffed things it keeps its crunch in milk, which is why it belongs in a breakfast bowl and not only in a snack packet. Built with jowar flakes, oats and rice flakes, then almond, cranberry, raisin, pumpkin seed and melon seed.
